The story of Heering Cherry Liqueur
Cherry Heering is a Danish cherry liqueur that dates to 1818 in Copenhagen. Peter F. Heering, a young merchant trading in colonial goods, took over an old cherry liqueur recipe from his former boss's wife. It became a staple on cargo ships bound for ports such as Calcutta, Madras, Shanghai and Jakarta. The brand is now owned by the Dutch spirits company De Kuyper, which bought it in 2017.
The liqueur is made from real cherries and botanicals, following the original family recipe. The cherries are crushed together with their stones, which gives a hint of almond, then mixed with neutral grain spirit, sugar and spices and matured in oak casks. At 24% alcohol it is sweet and rich, with a flavour like cherry jam and stewed plum. It is sweeter than cherry brandy or maraschino liqueur.
Heering is a standard ingredient in the Singapore Sling. It is also one of four equal-part ingredients in the Blood and Sand, alongside Scotch, blood orange juice and sweet vermouth, a drink that first appeared in the 1930 Savoy Cocktail Book. The brand also uses it in an Old Fashioned and a Manhattan.
