The story of Ouzo 12
Ouzo 12 comes from the Kaloyannis family, who began distilling in Constantinople in 1880. Customers kept asking for the spirit from one cask in particular, Barrel No 12, and that is where the name comes from. It was first bottled as Ouzo 12 in 1950, in the small carafe known in Greece as a karafaki, and since 2005 it has been distilled at Volos in central Greece.
The recipe is built on aniseed, star anise and fennel, with cardamom, nutmeg, cinnamon and coriander behind them. It is distilled twice in copper pot stills and bottled at 38 per cent. The anise oil, anethole, stays dissolved in strong alcohol but not in water, so adding ice or water turns the clear spirit milky white.
The nose is aromatic, with pronounced anise, sweet liquorice and warm spice. The palate is full, with fennel, cinnamon and cardamom, and it finishes smooth and clean. In Greece ouzo is sipped slowly over a long evening with small shared dishes, so grilled seafood, olives and feta are the natural company. Add ice-cold water to taste, or pour it over ice and keep it short.
