Tasting Notes
A smooth, creamy texture leads into a huge syrupy sweetness, flavours of milk chocolate, treacle toffee, aniseed, orange and smoky tea leaves. Gentle, sweet spices (nutmeg & cinnamon), some cigar smoke, and a very unusual flavour of grilled artichokes. Wood is always present in the spirit, gently nutty and reminiscent of a carpenter’s workshop. A long, sweet finish, with floral overtones, mint toffee and some gentle malty biscuit notes.
"Aroma: Gentle ripples of smoky pineapple, soured cream and wood smoke make for an irresistible nose. Newly planed oak and supple dark leather sing to your soul as sweet toffee and liquorice draw you in.

A splash of water releases a surge of unexpected notes. Struck flint, herbal pine resin and coal tar effervesce towards citrusy lime sherbet and subtle, yet sweet vanilla cheesecake.

Taste: The peaty power of this alluring spirit is undeniable, as it plunges your palate into its smoky depths. An intensely salty mouthfeel drifts into sweet and sour notes of smoked chili chocolate and paprika. Waves of toasted oak and roasted tea leaves emerge, before subsiding to reveal fresh peppermint fondant and salted white chocolate.

Finish: Firm but gentle, soothing wood smoke carries into a length, lingering finish – resonating far beyond the glass."

"The bouquet is ripe, lively and generous. The warm aromas of hay and brioche mingle with those of bergamot orange and russet stone fruit. The overall effect exudes smoky grey accents.
The vibrant opening strikes the first chord, a prelude to a complexity that is more tactile than plump, and only gives of itself gradually. The distinguished viscosity is understated and simply fits around the contours of the wine. The length is exquisitely bitter and abounds with sap, a mingling of liquorice and toasted malt."
"Dom Ruinart 2004 is a luminous yellow with pale green reflections. It has a fine but persistent effervescence. This vintage’s nose reveals the sweet, gentle notes of chestnut, coconut and fresh bread. This biscuity side to the wine very quickly gives way to the aromas of flowers (iris, lily-of-the-valley and the flowers of Seville orange trees) and citrus fruits (bergamot and citron). Just beneath the surface several mineral (wet rock and flint) and iodised saline notes make their appearance.

On the palate this vintage is initially direct but silky, sustained by mineral notes. The ephemeral nature of the Dom Ruinart 2004 is then revealed through citrus fruit freshness with touches of gentian. The very long finish is characterised by grapefruit and kumquat zest notes with just the slightest hints of salinity."
