FloralAgaveCitrusWarm spiceDon Ramón Punta Diamante Silver comes from Casa Don Ramón, a Mexican tequila house founded in Jalisco in 1996. In 2018 the brand was acquired by Dialce, a subsidiary of the Grupo IIDEA drinks group.
The Silver is a clear, unaged tequila made from 100 per cent blue agave grown in the Jalisco Highlands. The agave takes seven years to mature, and the piñas are baked slowly in autoclaves for several days before fermentation, which uses an aerobic process with a blend of yeasts and nutrients. The spirit is double distilled and bottled straight away, with no barrel time. About seven kilograms of agave go into each bottle.
In the glass it is sweet agave with a hint of vanilla and a bright citrus lift. The brand recommends serving tequila at room temperature in a flute glass so the aroma can open up, and says a blanco suits fruit based cocktails. Over ice with plenty of lime and a splash of soda is an easy way to keep the agave in front.
