The story of Baileys Irish Cream

Baileys was built to a brief. In the early 1970s Gilbeys of Ireland wanted a new drink, and an advertising man named Tom Jago led the team in London that developed it. Work began in 1971 and Baileys went on sale in 1974 as the first Irish cream. The R&A Bailey named on the bottle is a made up name.

The recipe is triple-distilled pot-still Irish whiskey, neutral spirit, cocoa, vanilla and sugar, with fresh cream making up half of each bottle. Mixing cream and spirit normally ends in curdling, so the makers borrowed a technique from the ice-cream industry that treats the cream's protein so it sits happily with the alcohol. It is bottled at 17 per cent alcohol by volume. Diageo owns the brand, and it is made in Dublin and in Northern Ireland.

The simplest way to drink it is chilled or over ice. It is also a natural partner for hot coffee and sits well poured over ice cream or into desserts. It also works in layered shots like the B-52.

One rule worth knowing is to keep citrus, tonic and other acidic mixers away from it, because they will curdle the cream.
