The story of Haymans Sloe Gin

The Hayman story starts in 1863, when Christopher Hayman's great-great-grandfather, a pharmacist, bought a gin rectifying business on Cale Street in Chelsea, London. Five generations on, the family is still distilling gin, and the company is run today by siblings James and Miranda Hayman, with their father Christopher alongside them.

Their sloe gin starts with wild-harvested English sloes, the fruit of the blackthorn and a relative of the plum. The berries are steeped in Hayman's gin for three to four months, to an old family recipe, and the gin is bottled at 26%. Traditionally sloes are picked after the first frost of autumn.

In the glass it shows soft plum, almond and ripe red fruit, a rich palate that balances tart and sweet, and a warming spice finish. Serve it over ice with lemon tonic and a twist of lemon peel, or top it with sparkling wine for a summer serve. The family also uses it in place of red wine in venison and duck casseroles.
