Vanilla & caramelOakWarm spiceAppleton Estate Rare Casks 12 Year Old started out under another name. It was sold as Appleton Estate Extra 12, lost its age statement when stocks of older rum ran short, and when supply recovered it came back as Rare Casks with the 12 years printed on the label again.
Every rum in the blend has spent at least twelve years in Jamaica, in once-used American oak barrels that previously held bourbon. The blend marries pot still and column still rums made from molasses, and it is cut with Jamaican limestone filtered water and carries no added flavouring. It is bottled at 43 per cent.
The nose is orange marmalade, brown sugar, vanilla and cocoa, with allspice and a faint trace of pot still funk. On the palate come dried orange, molasses, toffee and coffee, and the finish is warm and medium long, with oak and orange peel.
Pour it neat or over a large cube so the marmalade and coffee stay in front. It is rich enough to stand up to sticky toffee pudding or grilled pineapple.
