Vanilla & caramelOakRémy Martin has made Cognac in the town of Cognac, France, since 1724, when E. Rémy Martin founded the house. The VSOP dates from 1927, and its frosted bottle arrived in 1972. The centaur on the label was added by Paul-Emile Rémy Martin, who chose it for Sagittarius, his own zodiac sign.
The VSOP is a blend of eaux-de-vie from two of Cognac's crus, Grande Champagne and Petite Champagne, a combination known as Fine Champagne. The name has nothing to do with sparkling wine, and both crus have chalky soils. Bottled at 40 per cent, it pours a deep gold and shows vanilla, dried apricot and candied pear on the nose, a hint of liquorice, and a silky, well structured palate of dried fruit.
Pour it neat or over ice in a tumbler. It also works frozen, or in a Rémy Ginger. For something to eat with it, try a vanilla macaroon or blue cheese bites.
