The story of Don Ramon Mezcal Joven

Casa Don Ramón is best known as a tequila house from Jalisco, and its first mezcal, this joven, arrived in late 2020. Where most mezcal is associated with Oaxaca, this one is made from agave grown in Zacatecas, in north-central Mexico, one of the states covered by the mezcal Denomination of Origin.

The agave is 100% Salmiana, harvested when the plants are eight to ten years old, and the producer plants two new agaves for every one it harvests. Mezcal is traditionally made by roasting the agave hearts, often in earthen pit ovens, before crushing, fermenting and usually distilling twice. Joven means unaged, so the spirit is clear, and the maker describes it as carrying the earthen smokiness of the category. This 750ml bottle is 40% ABV.

The nose is grassy and herbal with a mild smokiness. On the palate there is vanilla sweetness, citrus and a hint of mint. Sip it neat in a small glass at room temperature, with a few drops of water if you want it to open up, or use it in a mezcal paloma, a margarita or a mezcal and tonic.
