The story of El Jimador Blanco
El Jimador is made by Casa Herradura at Amatitán in Jalisco, between Guadalajara and the town of Tequila. The brand launched in 1994 and is named for the jimadores, the field workers who harvest the agave. Herradura itself goes back to the 1800s, and Brown-Forman completed its purchase of Casa Herradura in January 2007, bringing El Jimador into its portfolio.
The Blanco is the unaged expression, and the brand's own site calls it Silver. It is made from 100% blue Weber agave and goes to bottle without any barrel time, so what you taste is the agave itself, fresh, crisp and clean. The brand's own site pairs its Silver with grapefruit in its Paloma recipes.
Blanco is the tequila to reach for in a Paloma. Pour it over ice, top with grapefruit soda, squeeze in some lime and finish with a wedge of grapefruit. It also holds its shape in a margarita, and it is clean enough to sip neat from a small glass with a pinch of salt and a slice of orange.
