The story of El Jimador Reposado
El Jimador Reposado is made at the Casa Herradura distillery in Amatitán, Jalisco, the site where every batch of El Jimador is produced. The brand was introduced in 1994. Fermentation there is natural, using wild yeast from the fruit trees and agave plants around the distillery.
Reposado means rested. The tequila is double distilled from 100 per cent blue Weber agave, then spends two months in charred American white oak barrels. That short stay is the point. The brand describes the result as bright agave with subtle charred oak, warm and seasoned, and tasters find vanilla and caramel in it, with a little cherry and cinnamon behind.
It earns its place in a margarita. Made with a reposado, a margarita picks up a rounder, oakier backbone than a silver tequila gives it. For something simpler, pour it neat or over one large ice cube and let it open up slowly.
