The grapes for this wine were grown on three of our best and most distinct Cabernet Sauvignon vineyards in the Clare Valley. They are located in Auburn and on both the east and west sides of Clare. Each site contributes its own unique microclimate and soil profile, resulting in a diverse range of palate structures and flavour profiles
2017 produced one of the latest-ripening vintages of the last decade. Heavy spring rain continued through to the start of summer, delaying the ripening process by almost a month. This resulted in a satiated soil profile, leading to greater vine growth and consequentially more fruit shading. The autumn period was remarkably dry, allowing ripening to proceed without disease pressure. The overall result was good yields, elegant wine structure and distinct varietal flavours.
The fruit from each vineyard site was picked independently of the others, when it reached an optimum level of flavour. Each parcel was then cold soaked for five days and fermented in 10 tonne open-top fermenters. Daily pump overs maximised extraction of colour, flavour and tannins from the berries. Parcels had contact with French and American oak for maturation. The winemaking team tasted each individual component before creating the final blend, which consists of only the highest quality components..
Our 2017 Cabernet Sauvignon opens with aromas of blackberry, cassis and orange peel, with hints of chestnut and forest floor. The palate shows vibrant, ripe blackberry flavours and nutty toasted oak. Fine chalky tannins and fruit are carried through the length of the palate.
