The story of Aperol Aperitivo

Aperol was created in 1919 by brothers Luigi and Silvio Barbieri, working in their father's liqueur company in Padua. They spent seven years experimenting before they settled on the recipe and called it an aperitivo. The name comes from apero, French slang for aperitif. The Campari Group makes it today.

It is a bright orange aperitivo made with gentian, rhubarb and cinchona, among other ingredients. At 11 per cent alcohol, it is less than half the strength of Campari, and it tastes and smells sweeter. Aperol spread through Italy after the Second World War, and the spritz that made it famous took off in the 1950s. The spritz itself goes back to Austro-Hungarian soldiers in Venice, who asked for their local wine to be diluted with water.

The classic serve is the Aperol Spritz: three parts prosecco, two parts Aperol and one part soda, built over ice in a large wine glass with a slice of orange. The Aperol sour is another way to use it. Salty snacks such as olives, crisps and cured meats are the usual company, and the drink is served cold and long.
