The story of Castelmaure Corbieres

Castelmaure is a growers' cooperative in Embres-et-Castelmaure, a village of about 165 people in the Corbières hills of the Aude, in southern France. The cellar was founded in 1921, and its member families work hillside plots where some of the vines are close to 100 years old. About half of the vineyard holds High Environmental Value certification, and nearly a third is moving towards organic.

Corbières is the largest appellation in the Languedoc, with about 13,500 hectares of vines, and it received its AOC status in 1985. Red wine makes up nearly 95 percent of what it produces. A red has to blend at least two grape varieties, with Carignan, Grenache, Syrah and Mourvèdre the main players, and the vineyards sit under the warm Mediterranean wind off the sea. Castelmaure has a particular name for Carignan: the cooperative began using carbonic maceration on it in the late 1970s, a whole-berry method that keeps the fruit bright and the tannins soft.

The result is a medium-weight red with cherry fruit and a dry herbal edge. It suits lamb, grilled sausages, and dishes built on tomato, garlic and thyme, and it holds up well beside a hard sheep's cheese.
