Green appleCitrusMonmousseau was founded in 1886 by Alcide Monmousseau in Montrichard, a town on the Cher river in Touraine, in the Loire Valley. He started a négociant business and took over about 15 kilometres of old limestone galleries, cut into the tuffeau stone that was quarried to build Loire châteaux such as Chenonceau and Chambord. The galleries became cellars for storing and maturing wine, and the house still works from them.
Brut Étoile is a non vintage sparkling wine labelled AOC Touraine and made by the traditional method, with the second fermentation in the bottle. Chenin Blanc leads the blend. The wine rests on its lees for up to eighteen months and shows pear, almond and fig with a fine, persistent bead.
Serve it well chilled in a white wine glass or a tulip rather than a narrow flute. It suits oysters or a goat's curd salad, and its dry, crisp style also makes it an easy aperitif.
