The story of Chateau Carbonneau Sequoia 750

Cuvée Sequoia comes from a working farm as well as a vineyard. Château Carbonneau, built in the 19th century on the hills near the Dordogne, keeps around thirty cattle of the Bazadaise, Blonde d'Aquitaine and Bretonne Pie Noire breeds on nearly 30 hectares of meadow below the vines. Their manure fertilises the vineyard, and the whole property has been farmed biodynamically since the 2023 harvest. Wilfrid Franc de Ferrière runs it with his son Pierre, who makes the wine.

Sequoia is a barrel aged red. Merlot leads, with Cabernet Sauvignon and Cabernet Franc, grown on clay-limestone slopes facing south and south-west. The grapes are destemmed and crushed, left to soak cold for a few days to bring out fruit and spice, then fermented warm, at 26 to 28 degrees, for natural extraction of colour and tannin. The wine then spends about a year in barrel. In the glass that means blackberry, vanilla and smooth tannins, finishing long.

It has the structure for a proper meal. Roast lamb, a rib of beef or a slow cooked casserole all match its weight, and a hard cheese afterwards suits what is left in the bottle.
