The story of Dom Perignon Vint

The first Dom Pérignon was made from the 1921 harvest, but it was not sold until 1936, when bottles went to New York aboard the liner Normandie. The name belongs to Dom Pierre Pérignon, a Benedictine monk who looked after the cellars of the abbey at Hautvillers from 1668 until he died in 1715. Moët & Chandon later bought the abbey's old vineyards at Hautvillers, and the brand now sits within LVMH.

Dom Pérignon is only ever a vintage Champagne. Every bottle comes from a single harvest, and the house skips years it judges too weak. The wine is always a blend of Chardonnay and Pinot Noir, in proportions that shift from year to year, and it rests on its lees for a long time, with the first release usually coming eight to ten years after the grapes were picked.

The legend says the monk invented sparkling wine. In fact he spent much of his effort trying to stop bottles refermenting, and his real contribution was blending grapes from different vineyards, with a leaning towards Pinot Noir. The wine carries that blending idea forward, with citrus and brioche notes and a long finish. Pour it into a tulip-shaped white wine glass and keep the food plain: oysters, scallops or roast chicken.
