The story of Drappier Champagne

Drappier has made Champagne in Urville, in the Aube, since 1808, and it is still run by the same family. Michel Drappier has led the house and its winemaking since 1979, and his children are now joining him. Their oldest cellars date to the twelfth century, when Saint Bernard of Clairvaux had them built, and the family has used them since the years after the Second World War.

What sets Drappier apart is Pinot Noir. In the early 1930s Michel's grandfather planted it when few others in the region did, and he became known as Papa Pinot. Pinot Noir now covers about 70 per cent of the family's vineyards, and the house's flagship Carte d'Or, launched in 1952, is roughly three quarters Pinot Noir with Chardonnay and Meunier making up the rest.

Drappier is also known for using very little sulphur, among the lowest doses in Champagne, which it says keeps the colour natural and the aromas open. Pinot-led Champagne tends to carry more body and ripe fruit than a Chardonnay-only style, with citrus and stone fruit riding on a dry finish. Pour it with roast chicken, grilled prawns, or a washed-rind cheese.
