The story of Hakushu 12YO

Hakushu is Suntory's forest distillery, founded in 1973 on the slopes of Mount Kaikomagatake in the Southern Japanese Alps, in what is now Hokuto, Yamanashi Prefecture. Suntory describes it as one of the highest distilleries in the world. Unlike Yamazaki in Osaka Prefecture, Hakushu is surrounded by woodland, with its own microclimate and four distinct seasons.

The water is part of the story. Rain and snow filter down through thousand year old granite, and Keizo Saji, the Suntory master blender of the founding era, searched Japan for it. Fermentation happens in wooden washbacks, and Suntory chooses pot stills and casks to suit the mountain climate. The 12 Year Old, bottled at 43 per cent, is the crisp, green side of Japanese malt. The colour is champagne gold, the nose is basil, pine needle and green apple, and the palate is sweet pear, mint and kiwi. The finish brings green tea and a thread of gentle smoke.

That freshness makes it a natural for the highball: plenty of ice, chilled soda and a sprig of mint. It also drinks well on its own, with something light and salty such as edamame, or a plate of grilled white fish.
