The story of Pegasus Bay SauvB

Pairing Sauvignon Blanc with Semillon is the white Bordeaux idea, and the Donaldson family make theirs in the Waipara Valley, North Canterbury. The vines grow on north-facing terraces of stony, free-draining soil, and the two grapes are picked in separate passes as each reaches ripeness, Sauvignon first and Semillon weeks later.

They are fermented separately too, both using natural yeasts. The Semillon is aged in French oak chosen to build texture rather than add oak flavour, and both varieties then rest on their lees for six months, with the Semillon staying in barrel throughout.

The flavours run to passionfruit, rockmelon, lime and gooseberry, with a savoury edge of crushed thyme. It is generous and mouth-filling on the palate, yet fresh and lively, and it finishes long with a grapefruit note. It drinks well on release, and the Semillon means bottles can be cellared for six to ten years if you want to see it develop.

Serve it chilled with crab on toast, grilled prawns, a goat's cheese salad or roast chicken with herbs.
