The story of Sheep Dip Islay Blended Whisky

Sheep Dip is a brand with an odd name and a long run. It was first produced in 1974 by MJ Dowdeswell and Company at Oldbury on Severn, near Bristol. Alex Nicol and Jane Eastwood took it on through their Spencerfield Spirit Company, set up in 2005 and run from a farmhouse in Fife. Ian Macleod Distillers bought the company in 2016 and bottles it today.

This Islay version is a blended malt. That means malt whiskies only, with no grain, and here all of them come from Islay. It is bottled at 40 per cent. The name nods to a story of farmers hiding illicit whisky in barrels marked sheep dip.

Expect smoke, as you would from the island. The nose is phenolic with creosote, heather, honey and vanilla. The palate is peppery, with a solid peat note balanced by honey and caramel, and a rich, malty toffee sweetness that gives way to fruit. The finish is long and smoky, with iodine, seaweed and salt from maturing by the Atlantic.

Serve it neat with a little water, or beside smoked salmon or oysters, where the sea notes find their match.
