The story of Aerstone Sea Cask
Aerstone is a pair of 10 year old single malts from William Grant & Sons, the family firm behind Glenfiddich, and Sea Cask is the light, soft one. The whisky is a Lowland style malt from the company's Ailsa Bay distillery on the Ayrshire coast.
What gives it the name is where it sleeps. The spirit is matured in ex-bourbon casks in a warehouse right on the Ayrshire shore, and the sea air is said to add a gentle coastal edge. Its sister bottling, Land Cask, goes the other way with a lightly peated malt and an inland warehouse, so the pair make an easy comparison. Sea Cask is bottled at 40 per cent.
In the glass you get buttery toffee, vanilla, shortbread, honeyed malt and orange on the nose. The palate is floral malt, nougat, vanilla sponge and honey, and the finish carries clove, candied lemon and a touch of salt. It is a gentle malt that suits anyone new to single malt, and it drinks well neat or over ice. A splash of water brings out the sweetness.
