The story of Barton & Guestier Chablis

Barton & Guestier goes back to 1725, when an Irishman, Thomas Barton, began shipping wine from the Chartrons quarter of Bordeaux down the Garonne to Ireland, England and the Netherlands. The house marked its 300th year in 2025. Its wines now go to 130 countries, sourced from more than 200 winemakers across 23 appellations, and since 2010 the company has been owned by the French Castel family.

Chablis sits in the Yonne at the very north of Burgundy, near the little Serein river, and has been an appellation since 1938. Only Chardonnay is allowed. The best sites are on Kimmeridge clay, a limestone soil packed with fossilised oyster shells. Basic Chablis rarely sees oak, and spring frost is a constant worry in such a cool, exposed region.

This bottle shows pear and apricot over delicate mineral notes. Serve it cool, with a plate of oysters or a soft white cheese.
