The story of Casa Noble Tequila Blanco

Casa Noble is made at La Cofradía, a distillery just outside the town of Tequila in Jalisco, Mexico. The brand was founded by Jose "Pepe" Hermosillo in 1997, with the aim of making an upscale tequila at a time when the category had a poor reputation, and the blue agave comes from the company's own estate.

The method is slower than most. The agave is cooked in ovens for at least 36 hours, fermented naturally and distilled three times, where two passes is the usual practice. The Blanco is the unaged expression, so it skips the French oak used for the brand's reposado and añejo, and it is bottled at 40 per cent.

In the glass it is herbal and grassy, with lemon peel, a little black pepper and a trace of smoke. Over ice the citrus comes forward. That profile makes a drier, less sweet Margarita, and it is a natural base for a Paloma, which the brand serves as the Noble Paloma.
