The story of Whispering Angel CotesD Rose

Sacha Lichine bought Château d'Esclans in 2006, an estate in the hills of Provence about 25 kilometres north-west of Fréjus, near the Gorges de Pennafort. He believed rosé could be taken more seriously, and he made Whispering Angel that year with Patrick Léon, who had been technical director at Château Mouton Rothschild. The name comes from the angel figures in the estate's private chapel.

The blend is Grenache, Cinsault and Rolle, which is the local name for Vermentino. The grapes are picked each September from sunrise until noon, so they come in before the heat of the day. The wine is fermented and aged in temperature-controlled stainless steel, and it is made bone dry, with a smooth, full feel rather than a sharp one. Château d'Esclans has 240 hectares of vines, and its rosés are sold in more than 100 countries.

The colour is a pale pink, and the fruit is fresh berries and citrus. It works best well chilled alongside food from the grill: prawns, grilled fish, a Niçoise salad or a simple tomato tart.
