The story of De Bortoli Woodfired HC Shiraz

De Bortoli began with Shiraz. Vittorio De Bortoli left Castelcucco in Italy in 1924 and reached Griffith, in New South Wales, the following year. In 1928 he bought a 55-acre mixed fruit farm, and when the farm ended up with a glut of Shiraz grapes he crushed 15 tonnes of them. Local demand for that wine was the start of the company. The family bought a Yarra Valley winery in 1987 and still owns the business.

Woodfired is the range made in Heathcote, in central Victoria, between the Goulburn Valley and Bendigo. Most vines there grow in deep red Cambrian soil that holds water through dry summers, which gives small, concentrated grapes. The wines are made with smoke and char in mind, inspired by the revival of wood-fired oven and charcoal cooking in Australia. The grapes are fermented with part of the bunches kept whole, and the wine is aged in oak that is mostly older, so only a small share is new.

This Shiraz is full-bodied, with dark berry and plum flavours, spice and oak. Winemaker Steve Webber describes the Heathcote flavour as a five spice mix. Open it with barbecued steak, lamb ribs, charred vegetables or a slow-cooked beef dish.
