The story of Dolin Vermouth Dry
Dry vermouth is tied to Chambéry, a town in the French Alps, and Dolin Dry is one of the best regarded examples. The house has made vermouth there since 1821. Chambéry was granted its own appellation for vermouth in 1932, and Dolin still follows its principles even though the appellation itself lapsed in 2017. That means making the drink in Chambéry, macerating real plants rather than buying in pre-made infusions, and sweetening only with grape must, wine or sugar.
Every Dolin vermouth starts from Ugni Blanc, a high-acid and fairly neutral white grape that gives the botanicals a clean base. In Dry, those botanicals include grand wormwood, brooklime, rose and orange peel, though the full recipe is a closely held secret. The bottle is 17.5 per cent alcohol, and the style is clean, light and floral rather than heavy.
Dolin Dry is the classic choice for a Dry Martini, stirred with gin and finished with a twist of lemon. It also makes a good highball, topped with soda and served over ice with a slice of citrus, and it can be sipped on its own before dinner.
