The story of Kyoto KI NO BI Gin

KI NO BI is made by the Kyoto Distillery, which was set up as Japan's first dedicated gin distillery. The gin went on sale in Japan in October 2016. The name means the beauty of the seasons, and the label is screen printed with a Kyoto paper workshop that dates back to 1624.

The base is a rice spirit rather than the usual grain spirit. Eleven botanicals are sorted into six groups: base, citrus, tea, herbal, spice and floral. Each group is distilled on its own and the results are blended afterwards. Juniper sits alongside yellow yuzu from northern Kyoto Prefecture, hinoki wood chips, bamboo, gyokuro tea from Uji and green sansho berries. Water from Fushimi, the district known for sake brewing, brings it down to a bottling strength of 45.7 per cent.

In the glass it opens with fresh yuzu and a thread of sansho pepper. Juniper leads on the palate and the finish is warm and spicy from ginger. Its makers name the Martini as the ideal serve and classic tonic as the mixer, with a twist of yuzu, a shiso leaf or a grind of pepper as the garnish.
