Mount Gay Eclipse Rum delivers smooth vanilla and banana notes balanced by light oak. Medium bodied and versatile, it offers a clean finish ideal for cocktails.
BananaVanilla & caramelOakEclipse is the flagship of Mount Gay in Barbados, and its name comes from the sky. It was named for a total solar eclipse and the passage of Halley's Comet in 1910, and the blend was developed in 1911.
It is a gold rum made from molasses, blended from rum distilled in pot stills and in column stills. The blend then matures in ex-bourbon barrels. It carries no age statement and is bottled at 40 per cent.
The character is drier than many Caribbean golds. Creamy vanilla, toffee and dried apricot show on the nose, then black pepper, caramel and butterscotch on the palate, with citrus zest and a hint of ginger. The finish is dry, with bitter toffee and a faint smokiness.
That dryness is why it works so well in a tall drink. Try it with soda and lime, or with ginger beer and a wedge of lime over plenty of ice.
