CitrusWarm spiceOlmeca Altos was created by two London bartenders, Dré Masso and Henry Besant, who wanted a 100 per cent agave tequila that worked in cocktails but could also be sipped neat. They developed it with Jesús Hernández, who oversees production at Destilería Colonial de Jalisco in Arandas, and Pernod Ricard makes it.
The name points to Los Altos, the Jalisco highlands, where the agave grows in red earth at roughly 2,100 metres above sea level. The piñas are roasted in traditional masonry ovens and the spirit is distilled in copper pot stills. Plata is the unaged style, bottled without time in barrel, here at 38 per cent.
Expect cooked agave and fresh lime or lemon, a soft and slightly sweet start and a touch of pepper at the end. It was designed for the bar, so build a Margarita or a Paloma with grapefruit soda, lime and a pinch of salt. It is also clean enough to serve chilled on its own.
