The story of Pasqua Pinot Grigio

Most Italian Pinot Grigio now carries one name on the label: Delle Venezie. That DOC covers three regions in the north-east, Veneto, Friuli Venezia Giulia and the province of Trento. It spans about 27,000 hectares and accounts for around 85 percent of the country's Pinot Grigio, which comes to roughly 230 million bottles a year, most of them sold abroad.

Pasqua is a Verona house whose home ground is Valpolicella, red wine country, so a white from the wider Venezie sits on the lighter side of its range. The grape itself is a close relative of Pinot Noir. A mutation centuries ago turned the skin from dark to a pinkish grey, and that is where the grigio comes from. In north-east Italy it is typically made light and crisp, with high acidity and a clean, quiet profile rather than a heavy one.

That makes it an easy white to match. Citrus, white peach and pear fruit sits with grilled fish, prawns, a fresh garden salad or a simple risotto with vegetables. It also works as the first glass before a meal, when something lean and dry is wanted rather than something rich.
