Verona is the city of Romeo and Juliet, and the Pasqua family, who run their winery there, named a range of wines after the lovers. This Prosecco is part of it. Pasqua is best known for Veneto wines such as Amarone, so a bright sparkling wine sits at the lighter end of what the family makes.
It is a Prosecco DOC made from 100 per cent Glera, the grape tied to the Treviso area, and it is made by the Charmat method, with the second fermentation done in a pressurised tank. The colour is pale straw with greenish highlights, and the nose is fruity, with pear, clementine, apple and white flowers. On the palate it is fresh and balanced, with a tangy, mineral finish.
Serve it cold, at around 6 to 8 degrees. The crisp finish suits seafood in creamy sauces, a caprese salad or pasta primavera, and it works as an aperitif with appetisers.
