The story of Sawmill Sierra WCIPA 440C
Sierra is one of Sawmill's seasonal releases, from the Matakana brewery north of Auckland that also makes the Hazy IPA, Bright IPA and Pilsner. It is a different animal from most of them: a 7.2% West Coast IPA, a good deal stronger than Sawmill's everyday IPA.
The brewery's description is short and sums it up. Old school West Coast style, bitter, crisp and dry, with a clean finish. That points to a sharp, dry beer with the bitterness doing most of the talking, rather than a soft hazy one. Sawmill's seasonal list also includes Punch Hazy IPA, Solstice Hazy IPA and a boysenberry lime sour, which makes Sierra the throwback among the limited runs.
Given the strength, it suits a slow pour. A dry, bitter IPA like this is at home with fatty and salty food: a pastrami sandwich, spicy fried chicken wings or a wedge of blue cheese with crackers. It comes as one 440ml can.
