CoconutShakthi Coconut Toddy comes from Sri Lanka, where it is made by Herb Excellence International at its facility in Melwatte, Lihiriyagama. It is sold in a 500ml can at between 3 and 5 per cent alcohol by volume.
Toddy is the fermented sap of the coconut flower. Tappers climb the palms at dawn, and the sap is collected after the flower has been beaten and cut. Its own sugar and yeast make it ferment naturally and quickly, which is why traditional toddy has to be drunk on the day it is tapped. The canned version is made with modern brewing and pasteurisation technology, and each batch is lab tested.
Toddy is not arrack. Arrack is made by distilling the same sap, usually in two steps, while Shakthi is the lightly fermented drink and is not distilled. In the glass it is light and refreshing, with a subtle sweetness and a natural tang.
Serve it well chilled, straight from the fridge into a glass. It is made to go with spicy food, seafood and Asian dishes.
