The story of Shingleback Cab Sauv

The grapes are grown on red and black soils over limestone at the Shingleback Vineyard.

Partial cold soaking before fermentation maximises the fragrance of the finished wine, and extended fermentation on skins helps capture the essence of the fruit.

Maturation in fine-grained French and Central European oak hogsheads softens and integrates the fruit and structure. The wine is food friendly, appealing on release and suited to cellaring.
