The story of Valdespino El Candado PX

Valdespino is one of the oldest bodegas in Jerez. It is named for Alfonso Valdespino, a knight who fought alongside King Alfonso X in 1264, and it owns 750 hectares of vineyard. The Estévez family bought the bodega in 1999. El Candado means the padlock, and the name comes from the family habit of locking up a cask for special occasions.

This is made from Pedro Ximénez alone. The grapes are laid in the sun on esparto grass mats so the sugars concentrate, then pressed, and the very sweet must ferments slowly. It is fortified to about 17 per cent with grape spirit and goes into a solera of old American oak, where it ages oxidatively for around a decade. It finishes with about 400 grams of sugar a litre and a dark mahogany colour.

The nose is raisin, dried fig, prune and date with coffee and spice. The palate is smooth and very sweet, with toffee, dark chocolate and molasses, and it finishes long. Pour a small glass, chilled gently, and have it as dessert. It is also good drizzled over walnut ice cream or sticky date pudding, or beside figs and blue cheese.
