The story of Black Robin Rare Gin

Black Robin Rare Gin is made by Simply Pure, a small distillery in Tauranga in the Bay of Plenty, which launched its spirits in 2013. The spirit is made by a German master distiller working as Distillerie Deinlein. The gin is named after the black robin, a small bird found only on the Chatham Islands, where just five survived in 1980 before a rescue programme brought the species back.

It starts with a triple-distilled whey spirit, made from the liquid left over from cheesemaking. That is distilled twice more with 11 botanicals, including horopito, a flowering shrub sourced locally. The still is a German Arnold-Holstein copper hybrid, and the gin is bottled at 43% in a 700ml bottle.

The style is piney and clean, with a creamy feel. Tasters pick out lemon and lime, lemongrass, black pepper, basil and a touch of liquorice and star anise.

Mix it with a good tonic and a wedge of lime, which lets the pepper and citrus show. It also holds its own in a dry martini, or with soda and a twist of grapefruit.
