The story of Hectors Platinum Ink Gin

Platinum Ink is the colour-changing member of the Hector's range from Akaroa Craft Distillery, on Banks Peninsula. It pours a deep ink blue because it is coloured naturally with butterfly pea flower, and it turns a vivid pink-mauve when tonic goes in. The shift happens because the flower's pigment reacts to the acidity of the mixer.

Underneath the colour sits the same style as the distillery's other Hector's gins: a London dry base, made in small batches, with native sea kelp, mānuka, thyme, lemon myrtle, orange and lavender. It is juniper-forward with lifted citrus, soft herbal and floral notes and a gentle saline finish. Like the rest of the family, the name comes from the Hector's dolphins of Akaroa Harbour, and the distillery gives part of its Hector's gin sales to the New Zealand Whale and Dolphin Trust.

Other bottles in the line include Little River Lemon Verbena, Little Akaloa Pink Blossom and French Farm Petit Pinot, each named after a Banks Peninsula bay or valley. Platinum Ink is the one to pour for the show. Build a gin and tonic in a clear glass, pour the tonic slowly over ice and watch the blue bleed into pink, then finish with a slice of orange.
