The story of Jip Jip Rocks Cab Sauv

Jip Jip Rocks is one of the labels made by the Bryson family at their Padthaway estate in South Australia, alongside Morambro Creek and Mt Monster. The vines grow on terra rossa soil in the Limestone Coast zone, in a spot with good sun exposure during the day and cooling coastal winds in the evening.

Those winds matter. They stretch out the ripening season, so the tannins and seeds have time to ripen fully, and the result is a Cabernet that is rich but supple rather than hard. The family keeps yields low and bunches small, and the wine carries 14.5% alcohol.

Recent releases show black raspberry and chocolate mint, with a bright, fruity medium to full body.

That mint note works well with lamb, whether it is a roast leg or burgers made from the mince. A hard aged cheese is a good alternative if you want something simple, and a bowl of tomato and sausage pasta also holds its own against the tannins.
