The story of Pallini Limoncello

Pallini is a family company that Nicola Pallini started in 1875 in Antrodoco, a small town on the Lazio and Abruzzo border. The business moved to Rome in the 1920s and is still family-run, now by the fifth generation. The limoncello is the younger product: Pallini first made it for export in 1999, from a family recipe.

The lemons are Sfusato Amalfitano, an elongated variety with a delicate, oil-rich peel, grown on the sea-facing terraces of the Amalfi Coast. They come from a family-owned grove at Vietri, are grown without chemical pesticides and are picked by hand. Only the yellow peel is used, and the white pith is left out. The peel is steeped in neutral spirit made from sugar beet, and the finished liqueur is 26% alcohol.

The taste is fresh and intense lemon that does not burn the palate. Serve it well chilled after dinner, build it into a summer spritz, or use it to give tiramisu a lemon edge.
