The story of Haku Vodka

Haku is a Japanese craft vodka from Suntory, made from 100 per cent Japanese white rice. The name translates as white, and also brilliance. It sits in Suntory's premium spirits line beside Roku gin and Toki whisky.

The rice is fermented and distilled in Kagoshima, in the south of Kyushu, a region known for rice spirits. After distillation the spirit is filtered through bamboo charcoal, a Suntory method that removes impurities and leaves a smooth, mellow character. It is bottled at 40 per cent.

The packaging follows the same idea as the liquid. The label is washi paper and the bottle is embossed with a pattern of rice stems.

In the glass it is soft and lightly sweet, with a silky finish and subtle almond and charcoal notes. That gentler profile makes it a good fit for drinks where the spirit should stay in view. Suntory's own serve is a Haku Martini with dry vermouth and a lemon twist. It also works long with soda, or in an Espresso Martini where a cleaner base lets the coffee lead.
