The story of Lake Chalice Falcon SauvB

Lake Chalice is a Marlborough winery that has been making wine since 1989. It began when two wind-surfing friends bought land in the Wairau Valley and started growing grapes. The name comes from a lake whose shape resembles a wine chalice, where a rare New Zealand falcon, the kārearea, was once sighted. The falcon now appears on every label. The Ibbotson family has owned the winery since 2015.

The Falcon is one of four ranges, alongside Plume, The Raptor and The Nest, and it draws on vineyards in Marlborough's Wairau and Awatere valleys. Winemaker Chloe Gabrielsen ferments fruit from single vineyards separately. The Falcon Sauvignon Blanc is pressed straight after harvest and cool fermented to preserve its aromatics, giving a fresh, zesty wine with green herbal notes, passionfruit and a mineral finish.

The kārearea is New Zealand's only falcon and its most threatened bird of prey, and the winery supports the Marlborough Falcon Conservation Trust and its release programme. Serve the wine well chilled, at around 8 to 12 degrees, with fish and chips, a prawn and avocado salad, or crumbed goat's cheese with a green salad.
