The story of Mellow Corn Bourbon

Mellow Corn is a Kentucky straight corn whiskey made by Heaven Hill, which has sold it since 1945. It is not a bourbon. Corn whiskey has to be made from at least 80 per cent corn, against 51 per cent for bourbon, and unlike bourbon it cannot be matured in new charred oak. Mellow Corn rests in used barrels instead, which keeps the colour pale and lets the grain show.

It is bottled in bond, so it comes from one distillery and one distilling season, spends at least four years in a bonded warehouse and is bottled at 100 proof, or 50 per cent. The bright yellow label with its barrel and ears of corn has hardly changed, and bartenders have taken to the bottle for both the look and the flavour.

Expect chargrilled sweetcorn, butter, almond and cinnamon on the nose, then sweet corn, toasty oak, black pepper and a hint of leather on the palate, finishing dry and spicy. A Whiskey Sour or an Old Fashioned suits it well, and it is just as easy to sip neat.
