BlackcurrantStone fruitOakThe Classic Series is the entry range from Viña Montes in Chile's Colchagua Valley, and its Cabernet Sauvignon is grown on the company's own vineyards at Finca de Apalta and El Arcángel de Marchigüe. Montes bought its Apalta estate in 1995, and the vines there grow on sloping, mainly granite soils with some alluvial influence.
Ocean breezes slow the ripening and the nights are cool, so the grapes keep their acidity. The wine is mostly Cabernet Sauvignon with about 15 percent Merlot. Fermentation is in temperature-controlled stainless steel, and about 45 percent of the blend then spends eight months in French oak. The rest stays out of barrel, which keeps the fruit fresh.
It is a medium bodied red with strawberry, cherry, plum and cassis, then toasty vanilla and sweet spice from the oak. The tannins are soft and the acidity balanced, so it drinks well without any cellaring. Serve it at 17 to 19 degrees with braised beef, a big pan of paella or a tray of lasagne.
