The story of Penfolds Maxs Cab Sauv

Penfolds Max's Cabernet Sauvignon is named in tribute to Max Schubert, who was Penfolds' chief winemaker from 1948 to 1975 and is best known as the creator of Grange. The wine carries the house style he shaped, and it is made from Cabernet Sauvignon grown across South Australia rather than in a single district.

Oak is both French and American. In the 2018 vintage the wine spent 12 months in oak, with 10 per cent of the barrels new French, and it finished at 14.5 per cent alcohol. That is a measured use of wood, which leaves room for the grape to show itself.

Across recent vintages the character has been classic Cabernet, with cocoa powder, red and black berry fruit, and herbal notes such as bay leaf, dried native mint or crushed mulberry leaf. Cedar and a little spice come from the oak. The tannins are firm, with length and drive, and a seam of fresh acidity keeps the whole wine lively.

It is a red built for meat. Grill a lamb rack or a rib eye and serve it alongside, or put it with a slow roasted shoulder of lamb and rosemary. A few years in the cellar will soften it, but it is open for drinking now.
