The fruit is handpicked and whole-bunch pressed, then handled with minimal intervention and left on its lees for an extended time. Sur lie means the wine stays in contact with the spent yeast rather than being racked off it, which builds a creamy, rounded texture and helps any oak sit softly. Gentle oak adds depth without taking over.

Central Otago's cool climate and schist soils keep the fruit bright. Expect white florals and ripe citrus, a little toasted almond, and a creamy but lively finish.

Take it out of the fridge a little before pouring, because the texture shows best when it is cool rather than icy. It is a good match for roast chicken, pan-roasted snapper with lemon and capers, creamy pasta or a mushroom and leek risotto.
