Rabbit Ranch Rose

The style is dry and Provençal, meaning pale in colour and delicate in flavour. The fruit is pressed lightly to draw out just enough colour for the pale pink, then fermented fully dry so the red fruit of Pinot Noir comes through without any sweetness.

In the glass it is crushed berries over alpine flowers and citrus sorbet, with a cool climate mineral edge running through it. The vineyards are high altitude and are managed with inter-row cropping, no-till farming, composting and sheep grazing.

Serve it well chilled. It suits light seafood, fresh salads and a charcuterie board, and it is the kind of wine to open on a warm afternoon that stretches into the evening.
