The story of Wither Hills Sauv Blanc

Wither Hills was established in 1994 by Brent Marris, a Marlborough winemaker who had already helped Delegats Wine Estate set up the Oyster Bay brand. His father John, a pioneering Marlborough viticulturist, joined the business several years later. The name comes from the Wither Hills range that borders the vineyards, and the cellar door and restaurant in Blenheim look out over the Wairau Valley.

Sauvignon Blanc is the grape that built Marlborough. Commercial winemaking began in earnest in 1973, when Montana planted the first large vineyards, and Cloudy Bay's 1985 Sauvignon Blanc brought New Zealand wine international acclaim. It is still New Zealand's largest wine region by a wide margin. Wither Hills works in that tradition, and its range includes a single vineyard Sauvignon Blanc drawn from the Rarangi, Taylor River and Ben Morven vineyards.

Marlborough Sauvignon Blanc is known for passionfruit, gooseberry and fresh-cut grass, with capsicum notes when the grapes are less ripe. Many New Zealand producers ferment in stainless steel to keep that flavour sharp and focused. Serve it chilled with fish, lobster, squid or sushi, or with a soft goat's cheese.
