CitrusDark berriesCherryOakPatriarche Père & Fils was founded in Beaune in 1780 by Jean-Baptiste Patriarche, who bought a former Visitandines convent in 1796. It is still the house's home. Beneath it run about five kilometres of vaulted cellars holding more than two million bottles, and in the twentieth century André Boisseaux joined around 35 neighbouring cellars to the network. Visitors can walk through them and taste.
Patriarche works as a négociant. It owns no vineyards itself and instead buys from growers in Burgundy on long-term contracts. This Chablis comes from the northern edge of the region, roughly 180 kilometres southeast of Paris, where the only permitted grape is Chardonnay. The soils are a mix of limestone and clay.
In the glass you get yellow apple, pear, gooseberry and lemon, dry and fresh. Serve it at about 8 degrees with fish or shellfish, such as steamed mussels or grilled white fish, or with a green salad dressed with lemon.
