The story of Bulleit Bourbon

Bulleit Bourbon is a modern revival of a very old family recipe. Augustus Bulleit is said to have made his first batch around 1830, and production ended with his death in 1860. His great-great-grandson Tom Bulleit oversaw the first batch of the modern bourbon in 1987, keeping the high rye character of the original. The brand was bought by Seagram in 1997 and passed to Diageo, which opened its own Bulleit distillery in Shelbyville, Kentucky, on 14 March 2017.

What sets it apart from most bourbon is the grain bill. The mash is 68 per cent corn, 28 per cent rye and 4 per cent malted barley, which is more rye than the usual bourbon recipe. That rye shows up as pepper and spice on top of the sweetness of the corn.

In the glass there is vanilla, caramel and orange zest on the nose, then a sweet start that turns peppery and oaky, with a hint of cinnamon and ginger. The finish is long and spicy.

That spice is why bartenders reach for it. It holds its shape in an Old Fashioned, a Manhattan or a whiskey sour, and a splash of ginger ale over ice shows its rye edge.
